Cheese Spinach Puffs

Ingredients:

  • 1-10 oz. pkg. frozen, chopped spinach
  • 1/2 C. blue cheese salad dressing (Bob's)
  • 1/2 C. chopped onion
  • 1/4 C. margarine
  • 2 slightly beaten eggs
  • 1/8 tsp. garlic salt or powder
  • 1/2 C. Parmesan cheese
  • 1-8 1/2 oz. pkg. corn muffin mix (Jiffy)
  • 1/2 C. shredded Cheddar


Preparation

In saucepan cook onion in a little margarine. Thaw and drain spinach (squeeze out excess water with hands). Add to saucepan and cook until warm. Combine eggs, cheeses, salad dressing, margarine and garlic powder. Add spinach mixture and muffin mix; mix well. Cover and chill 30 minutes, or more. Shape into 1" balls, place on baking sheet. Bake at 350° 10 to 12 minutes or until light brown (if puffs are frozen, bake 15 to 25 minutes or until light brown). Makes approximately 45 to 60 balls.
