Zucchini Bread

Ingredients:
- 3 eggs
- 2 tsp. baking soda
- 1 1/2 C. oil
- 1 tsp. baking powder
- 2 C. grated zucchini
- 1 tsp. salt
- 2 C. brown sugar
- 1 tsp. cinnamon
- 2 tsp. Vanilla
- 1 tsp. ground cloves
- 3 C. flour
- 1 C. chopped nuts, opt.
Preparation
In large bowl, combine eggs, oil, zucchini, sugar and vanilla. Combine all dry ingredients
together and add to zucchini mixture. Mix all until well blended. Pour into Pam-sprayed loaf pan.
Bake at 350° about 1 hour or until toothpick inserted comes out clean. Remove from oven;
cool and serve.
