Make crust by combining first 3 ingredients. Spread in bottom of a 9" spring form pan and on sides. Stir cheese until soft, add eggs, sugar and vanilla (I do this in a blender). Beat until thoroughly creamed and smooth. Pour into crust. Bake at 350° for 20 minutes. Cool for 5 minutes, then with last 3 ingredients, after mixing, pour carefully so mixture doesn't make a hole in cheesecake. Bake at 450° for 6 minutes. Cool and chill for 3 hours. Serves 8.
