Redsnapper Monterey

Ingredients:

  • 1/4 C. oil
  • 1-15 oz. can whole tomatoes undrained
    and chopped
  • 1/2 med. onion, diced
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 1/2 lb. mushrooms, sliced
  • 1 C. Monterey Jack cheese, grated
  • 1-4 oz. can diced green chilies


Preparation

Sauté first 5 ingredients. Add tomatoes and seasonings. Simmer over low heat about 7 minutes. Place 2 pounds of Red Snapper fillets on buttered baking dish and pour sauce over all. Bake 30 minutes at 350°. Remove from oven and sprinkle with cheese. Cover to melt cheese and serve. Makes 8 servings.
