Redsnapper Monterey

Ingredients:
- 1/4 C. oil
- 1-15 oz. can whole tomatoes undrained
and chopped
- 1/2 med. onion, diced
- 1 garlic clove, minced
- Salt and pepper to taste
- 1/2 lb. mushrooms, sliced
- 1 C. Monterey Jack cheese, grated
- 1-4 oz. can diced green chilies
Preparation
Sauté first 5 ingredients. Add tomatoes and seasonings. Simmer over low heat about 7 minutes. Place 2 pounds of Red
Snapper fillets on buttered baking dish and pour sauce over all. Bake 30 minutes at 350°. Remove from oven and sprinkle
with cheese. Cover to melt cheese and serve. Makes 8 servings.
