Cream of Broccoli Soup

Ingredients:

  • 1 l/2 C. chicken broth
  • Dash pepper
  • 1 T. margarine
  • 1 C. milk or light cream
  • 1 T. flour
  • 3 C. broccoli florets or 1-10 oz.
    pkg. frozen broccoli
  • 1/4 tsp. dried thyme, crushed
  • 1/8 tsp. pepper


Preparation

Cook broccoli. In blender, combine broccoli and 3/4 Cup broth. Cover and blend until smooth. In 2-quart saucepan, melt margarine, stir in flour and seasonings. Add milk all at once. Cook and stir until thick. Stir in broccoli and remaining broth. Cook and stir until heated through. Makes 3 to 4 side dishes.
