Potato Lover's Salad

Ingredients:

  • 6 sm. Potatoes
  • 1 C. red cabbage, shredded
  • 2 T. butter
  • 1 clove garlic, crushed
  • 1/4 tsp. Paprika
  • 2 T. lemon or lime juice
  • 2 C. broccoli florets
  • 1/4 C. oil
  • 4 C. lettuce, torn bite-sized
  • 1/2 tsp. dried oregano
  • 2 C. spinach, chopped
  • 1/4 tsp. dried thyme
  • 1 C. alfalfa sprouts, separated
  • 1 to 2 T. mayonnaise


Preparation

Steam whole, unpeeled potatoes until almost tender. Prepare broccoli, greens and dressing. For dressing, pierce garlic with fork. In measuring cup, put lemon juice, oil, oregano, thyme and mayonnaise. Whip with garlic fork until thick and creamy. Cube potatoes and spread in 1 layer on cookie sheet. Add butter and paprika. Broil 5 to 10 minutes. Steam broccoli until just tender. To greens add cabbage, sprouts and broccoli. Toss with dressing. Add potatoes and gently toss. Serves 2 to 3.
