Frugal Gourmet's Red Beans and Rice

Ingredients:

  • 1/2 lb. red beans (prepared as below)
  • Ham chunks, may use turkey ham
  • 1/2 chopped bell pepper
  • Rice - prepared according to your usual manner
  • 1 lg. onion, chopped
  • 2 T. parsley
  • 1/8 lb. margarine
  • 2 bay leaves
  • Fresh pepper
  • 2 cloves garlic
  • Shot of Tabasco sauce
  • 3 stalks celery, chopped
  • 1 T. Worcestershire sauce


Preparation

Soak beans overnight; drain. Add all ingredients EXCEPT Worcestershire sauce, rice, margarine, pepper and Tabasco. Cover bean combination with water. Simmer 2 hours with lid off; watch carefully. After simmering 2 hours, add margarine, pepper, Tabasco and Worcestershire sauce. Cook 1 more hour, uncovered on simmer, watch carefully. Serve on rice.
