Frugal Gourmet's Red Beans and Rice

Ingredients:
- 1/2 lb. red beans (prepared as below)
- Ham chunks, may use turkey ham
- 1/2 chopped bell pepper
- Rice - prepared according to your usual manner
- 1 lg. onion, chopped
- 2 T. parsley
- 1/8 lb. margarine
- 2 bay leaves
- Fresh pepper
- 2 cloves garlic
- Shot of Tabasco sauce
- 3 stalks celery, chopped
- 1 T. Worcestershire sauce
Preparation
Soak beans overnight; drain. Add all ingredients EXCEPT Worcestershire sauce, rice, margarine, pepper
and Tabasco. Cover bean combination with water. Simmer 2 hours with lid off; watch carefully. After
simmering 2 hours, add margarine, pepper, Tabasco and Worcestershire sauce. Cook 1 more hour, uncovered
on simmer, watch carefully. Serve on rice.
