■ 6 eggs, beaten
■ 1/2 C. butter or margarine
■ 1/2 lb. Jack cheese, grated
■ 1/2 C. flour
■ 1/2 lb. Cheddar cheese, grated
■ 1 tsp. baking powder
■ 1 C. ham, diced
■ Salt and pepper to taste
■ 1 C. milk

Optional: Ortega chilies or crushed red peppers
■ 1-3 oz. soft cream cheese

Cooking Instructions:

Whip softened cream cheese until smooth, add beaten eggs; mix well. Melt butter and add to egg mixture, blend together and add cheeses, ham and milk. Mix dry ingredients together and add to egg mixture; mix all ingredients together until well blended. Pour into greased 3-quart baking dish and bake 50 to 60 minutes in 350 oven.
