■ 3 C. instant mashed potatoes
■ l/4 tsp. onion powder
■ 4 eggs, separated
■ Salt
■ 1 C. grated Cheddar cheese
■ Paprika
■ 1/2 tsp. celery salt

Cooking Instructions:

Beat egg yolks into mashed potatoes. Add grated Cheddar cheese, celery salt, onion powder and salt to taste. Whip egg whites in a separate bowl until soft peaks form. Fold egg whites into potato mixture. Spoon into a buttered 1 1/2-quart casserole dish; sprinkle with paprika. Bake at 375 for 25 to 30 minutes. Careful not to open oven door or disturb souffle. Souffle is done when browned on top. Serve immediately. (Souffle may fall if disturbed or not served immediately. Although it's appearance isn't as nice this way, it is still a wonderful dish. Makes a great "company" side dish.
