■ 1 sm. head iceberg lettuce
■ 2 oz. Maffun (dry Chinese noodles)
■ 1/2 lb. cooked chicken or turkey
■ 2 lg. nectarines, or lean mandarin
oranges cut into wedges
■ 1 T. roasted sesame seeds
■ Oriental dressing

Oriental Dressing
■ 1/3 C. sugar
■ 1/4 C. white vinegar
■ 1 T. soy sauce
■ 1 tsp. Ginger
■ 2 T. sesame oil
■ 2 T. vegetable oil

Cooking Instructions

Shred lettuce and place in a large bowl; set aside. Heat bout 2" oil in a mini-fryer or saucepan to 375. Add rice sticks, a few at a time, to hot oil; cook 3 or 4 seconds until they puff and crisp. Remove from oil with slotted spoon; drain on paper towels. Arrange noodles on top of lettuce; pile chicken and nectarines on top of noodles. Pour dressing over salad and sprinkle with sesame seeds.

For dressing, place sugar, vinegar, soy sauce and ginger in blender. Whirl at low speed until combined. With blender running at low speed, gradually add sesame oil and vegetable oil until well blended.
