■ 1 C. raisins
■ 1/2 tsp. cinnamon
■ 1 C. dried, diced fruit of your choice
■ 2 eggs, beaten
■ 2 C. water
■ 1 C. applesauce (sugarless)
■ 2 C. flour
■ 2 T. liquid sweetener
■ 1 tsp. baking soda
■ 3/4 C. oil
■ |/2 tsp. Salt
■ 1 tsp. vanilla
■ 1/2 tsp. nutmeg

Cooking Instructions

Combine raisins, fruit and water in a saucepan. Cook uncovered until water is evaporated and fruit is soft. Set aside and cool. Combine four, baking soda, salt, nutmeg and cinnamon. In a separate bowl, mix eggs, applesauce, sweetener, oil and vanilla. Blend all these ingredients until well blended. Add fruit and gradually mix in dry ingredients until thoroughly mixed. Pour in a greased bundt pan. Bake at 350 for 35 to 40 minutes or until done.
