■ 1/2 lb. red beans (prepared as below)
■ Ham chunks, may use turkey ham
■ 1/2 chopped bell pepper
■ Rice - prepared according to your usual manner
■ 1 lg. onion, chopped
■ 2 T. parsley
■ 1/8 lb. margarine
■ 2 bay leaves
■ Fresh pepper
■ 2 cloves garlic
■ Shot of Tabasco sauce
■ 3 stalks celery, chopped
■ 1 T. Worcestershire sauce

Cooking Instructions

Soak beans overnight; drain. Add all ingredients EXCEPT Worcestershire sauce, rice, margarine, pepper and Tabasco. Cover bean combination with water. Simmer 2 hours with lid off; watch carefully. After simmering 2 hours, add margarine, pepper, Tabasco and Worcestershire sauce. Cook 1 more hour, uncovered on simmer, watch carefully. Serve on rice.
